Ride it on dirt and avoid pavement? You don’t really need to do anything. That’s a rad bike that just wants to be ridden everywhere.

Honestly it looks sweet, maybe just tell people it’s a flat bar gravel bike. Not really much you can change because the form fits the function. Maybe a suspension fork? But why get rid of the sweet ti(?) one.

I think you are all set.
IDK the definition, but generally a hybrid would have a bar full of shifters and such. A good range of gears is super useful for handling different kinds of terrain.
Yours just looks like a single speed bike, which is what happens when a lot of stuff is stripped off.
If you really want fatter tires, you could look into a 650 conversion.
