Picked up this Ascent in great condition for $220 on marketplace.
Thinking to upgrade in order:
1) Tires
2) Brakes
3) Saddle
4) Bars/shifters/1x conversion
How can I learn what wide range cassettes (for example 1×11 spd) are compatible with this hub and derailleur?

I have a ’90 that I’m in the middle of converting to 1×12 for shits n’ gigs. Such an awesome paintjob on yours. Enjoy!
If it’s an original 7speed wheel, it will only fit 7 on the rear. Upgrade to a 9speed rear wheel or buy an older 9 speed hg hub shell and swap it on to fit anything up to mtb 12 speed. The only kicker with 12 speed is you need an 11-50t cassette, which shimano doesn’t make. Sram does, and other amazon brands. 11 speed mtb cassettes should fit no problem.

i love those old db paintjobs, one of my favorites from the 90th mtbs!
in my opinion the stems are kinda ugly..
i would go for:
new seatpost and saddle
modern stem and bar (since its kinda small i would go for a surly sunrise or similar)
1x conversion (i always wanted to build a 1×9 cues 11-41)
in my opinion the hub is the problem, the derailleur is extendable with a hanger extension (results in loss of chaintension tho)
i changed some hubs on old mtb in the past, its a bit tricky which hub will fit but its most likely possible!
