Pull ratio: are these adjustable for pull ratio or feel?
I would love to run these with Cantis but I’m struggling to find a definitive answer online whether this model can be short pull – maybe a dumb question. Thanks in advance
Why don’t you just test it? Put a cable in and see how much the lever pulls in each configuration.

Pull ratio. Right now it’s in the short-pull position.

Those are Avid BMX levers designed for V brakes. You can probably use them with cantis, but they won’t have a lot of feel adjustment. I have several sets but they are all on v brakes (which they work great on) or on a pair of AMP discs (which they do not work great on, even screwed all the way in).
Edit:punctuation

Those are V brake levers. They “work” with cantis, in that the brake will move, but you won’t have as much stopping power as you would with a proper short pull lever.
