Hello everyone,
Can I safely remove the top part of the stem without messing with the adjustments and put in my sp connect stem mount? Bike is a grizzly CF sl 1by if important. The mount I have right now is absolutely hideous and takes away too much space in my cockpit. Thank you!

Grizl not grizzly of course 🐻
Should be fine, cap is there just to preload the stem, one the stem is on and torqued to spec it’s not doing much.
Won’t affect anything as long as you don’t loosen the stem pinch bolts.
Just keep a couple things in mind. Those stem cap bolts can strip pretty easy. Normally, it only takes about 2 – 4nm. If you don’t have a torque wrench, don’t wrench past the point of your cap being snug.
Most canyon bikes use a 1 1/4 stem cap, and the “standard” industry size is 1 1/8, so your phone mount might not work, might be too small.
Last thing, since you have a grizl, I’m assuming you take it on non paved dirt roads. The rigid phone mounts won’t soak up any vibrations which transfers to your phone. Too much vibration can be bad for your phone. But this is more long term affects.
Hope this helps.
