Attempting to fix up this 2003 Specialized Allez Elite. The front shifter feels like it has 3 shifts/clicks. The third shift sends the chain off the chain ring.

Is it possible this was a 3x that the previous owner converted to a 2x?

Its probably the trim setting. What makes you think it has 3? Afaik allez would be unlikely to have 3 gears up front

Edit: NVM other comment says there was an allez triple

    2. There were 2 models of the 105 crank. the FC5500 and the FC5503. chances are there are still some BCD74 mounts hidden behind that crank and it is the triple version.

You can also spot if it is a triple front derailleur. The inner sheet metal strut of the triple FD-5503 is more than twice as wide as the front sheet metal strut while the one on the 2x FD-5500 is about the same in width as the front strut.

Lots of brands sold bikes with triple STI/double cranks in this era. Trek especially. I think you’re better off setting up such bikes to not use the higher gears even though there is a risk that you can shift into 3rd at the lever and over stress the internals as the cable comes up to guitar string tension. If you set them up to not use 1st the cable end can come unseated if you shift to first and jam the shifter

    4. I just went through something similar with a mtb shifter. Between tightening the cable and cranking down on the h-screw limit, I was able to prevent it from accidentally shifting to the 3rd spot

Depends, how much does the “extra” shit move? As others have said, it could be the trim function on some 2x setups. IIRC it is so you can get more range out of your big ring without the chain rubbing the front derailleur.
