I’m 5’10” with 33” inseam which puts me right in between a small and medium. Canyon recommends Small. Anyone been in a similar situation and/or have any input? Should I go with the recommended small or size up?
Those are my measurements too. I chose a medium and its fine – seat is all the way forward. Canyon said medium or small works. I’m on a grail cf slx. (Secretly I’d like to try a small)

Easier to make a small bike fit than a big bike. grizl and grail are both known to fit large. Stack and reach for these bikes in a small are basically the same as my Ultimate in M.
(I am 181cm, would choose small).

Try measuring in cm. Does that move the needle either way?
When I measured myself in inches I was in-between M & L, but measuring in cm put me in L. I got a fit after getting the bike and they changed the stem from 90mm to 70mm, but said it was a great fit for me otherwise.
