hi I’m Jennifer and I’m Janis and welcome to salv salento and today in today’s episode we wanted to Showcase in Spotlight salento one of the special places that’s in southern pulia here that uh is in cetto in salento and it’s casao arudi and this is a dairy and on this property they actually have the cows produce the milk make the cheese and sell it they also sell other dairy products too they sell milk and they sell gelato and we’re going to take you on a little tour you think that you’ve had cheese before nothing ever as amazing as this this is kilometer zero you can’t get any fresher than this they make everything right on site welcome to casao arudi [Music] okay so you can see behind us we’re in the area where they actually make the cheese and they’re making all different types of cheese in here and we’re going to show you I mean the smell in here is amazing smells so good this is definitely going to be a dangerous trip yep and now he’s making them with oh wow look at that how beautiful oh my gosh [Music] [Music] wow in okay from mozzarella okay oh they going make Pata oh wow machine we still cold so it’s a little warm still and now just going to fill it stretch ite which is Mozel and it’s mixed with cream and then forms it into a b a little [Music] p so the types here they’re making fresh cheese with with nuts fennel Rula pepperon chinos which is hot pepper lemon and orange and then is this this is plain it’s plain it’s [Music] beautiful no and here’s beautiful garden where they grow all kinds of tomatoes yini pumpkins just such a beautiful amazing place and this is the other part of the garden this is just unbelievable look at how beautiful so now we’re here at the dairy and I was just speaking with the owners of the casao arudi and of the property here they own all of this land that they’ve been running this business for Seven Generations they started out with one cow and they said on this land they’ve been growing vegetables so they have their own garden here that they grow their own vegetables and also all of the feed that they feed the cows here so they’re very self-sufficient they don’t have to rely on anyone else to provide the feed for their cows and this is where they get all of the milk for all the dairy products that they produce in the dairy so I’m going to give you a little tour so we’re doing a little tour of the property here um where they keep the cows and um before they keep them in here they they’re grazing right now they’ll come in here they said they hold about 150 cows in here and then while they’re waiting to get milked he said about 20 we’ll wait here but we found a little Discovery he said these cows are only a week old on be so sweet I wish they could come man see you hi hi you’re so sweet hi hi [Music] hi hi you know I have a whole bunch of friends hi so I’m here with Gabriella and elenia is the name of the horse but it’s also the name of his wife that uh the horse was given as a gift to his wife from his father which is so sweet and she does ride the horse correct she does yes she comes and she rides it which is really nice so I’m here on the grazing area for the cows and it’s really really white open I mean this is a huge space for 300 cows that he said that they have here and um I mean he said the the cows here are very very happy you know what they say when you have happy cows you have absolutely delicious cheese so it’s a warm day today and you can see that the cows are kind of taking a break and some of them go for a little bit of a walk but they kind of sit under the shade of the tree and they just just relaxing and enjoying the weather here it’s absolutely beautiful so here is the storage facility where they keep their grain to feed the cows and he was just telling us that they just Harvest this yesterday so they have green here that they just harvested which this is just amazing they just store it here until they need it [Music] and here we have all of the hay that the cows are eating and I mean this is just unbelievable this is what a facility this is I had absolutely no idea that all of this was here when we go into the shop to purchase some cheese right you think it’s just a little cheese shop and then you find out all these beautiful things that are working in so much hard work behind the scenes to be able to make make all of this [Music] happen and they’re are they are they right they’re ready oh the figs are ready beautiful oh my goodness I love oh you oh thank you graas oh Dennis is having figs they’re delicious we just picked them off of the tree so I mean and this is some tree this is One Tree one yes very old tree [Music] so we actually returned here after visiting the dairy and they are so busy here that the customers are waiting outside they have to take numbers to wait to get inside which is absolutely unbelievable but this is such a popular place in this area um everybody knows the quality and how good the cheese is here and really we I came here just planning on doing a little video but the family has just been so wonderful what an unexpected surprise to meet such wonderful people and I mean for Seven Generations this is an unbelievable tradition to be able to carry on and they are carrying it on with their children because Gabrielle who was helping us today he uh he also works here at the the store also and he works at the dairy and he grew up on the property that we just showed you um that’s their family home which thank you so much for inviting us and welcoming us to your home and letting us come and take some photos and be able to share this experience with people that are on the channel and we really really appreciate it thank you so much peanut B with salad caramel y for did I mention that they make their own gelato here this is absolutely delicious Dennis how is that ice cream how’s the gelato how’s the Fraga oh my goodness it’s almost gone we hope that you enjoyed this video it was a lot of fun making it seeing the different uh parts of the farm the store everything whole process and meeting the family here what an amazing family seven generations to have been doing this for seven generations and this is part of the magic of this area especially places in Italy that these Traditions are passed down from generation to generation and they’re able to build these family businesses and keep them going and as they go on I mean everything here is absolutely amazing so I can’t I can’t imagine it being any better than this so again thank you for joining us today I hope you enjoyed
