This deluxe five star luxury resort and spa is one of the top destination establishments on the Mediterranean coast (La Cote d’Azur) of France. Quite apart from its eagle’s nest location perched on a hill high above the sea coast with views to the far horizon, its luxury rooms and suites, it boasts one of the finest chefs in the South of France – Executive Chef Vincent Maillard, who designed the open plan kitchen and is responsible for all the food, the food service even down to the cutlery used at table. He has created a perfect compliment to the architecture and ambiance of the architect who designed the sprawling hotel and grounds, world renown Philippe Starck who created the hotel that does not impose itself on Nature, but adapts to it. Inspired by the Hanging Gardens of Babylon, the architecture of Provençal abbeys and the style of Californian villas, Philippe Starck has designed forty-four rooms and suites with comfort, culture and generosity. It is quite new as it opened its door in 2019 and they kept their staff on all during Covid.

    But its not just about spoiling yourself with food and environment, this establishment also offers health and fitness from yoga to indoor cycling and aquatic sports, you can enjoy a group class or private sessions with qualified coaches. Or just take off on your own. Just allow enough energy to make it back up the steep, winding road back to the hotel. Of course you can always text for the hotel’s shuttle to pick you up and let the motor do the work.

    But getting back to the food – these days so many resorts and hotels have chefs that seem to be more interested in whether a plate will qualify as a work of art for the wall rather than feed someone. But Chef Maillard while more than adept at art on the plate serves real meals that will fill you up and leave you satisfied. His style is straight from the Mediterranean region to create delicious, healthy, sun-drenched cuisine. Filled with color and flavor, his dishes tantalize the taste buds and invite you to indulge in guilt-free goodness (well maybe not for the desserts!). If the menu does now have what you want, you can always ask for what you do desire and he will do his level best to meet your wishes. On top of everything, he is a delightful guy.

    We have been eating with him for almost 30 years and have never been disappointed as we follow him from kitchen to kitchen starting with his sojourn at “La Bastide de Moustiers” as chosen to head the kitchen by Alain Ducasse.
