In April 2019 my wife Clara and I did this bike packing trip in our Open bikes, we started in Lisbon, Portugal and rode north bordering the Atlantic coast, we had a one-day stop in Porto, Portugal and then we kept going north until we arrived in Santiago de Compostela, Spain. It took us 500+ miles and 11 days, We highly recommend it, the food is awesome, people are pretty nice, beautiful views and Eurovelo Portugal does an amazing job with the route, it is so well signal that you barely need a GPS https://euroveloportugal.com/en/
