I am looking to buy my first gravel bike, currently riding a hardtail MTB from Canyon, the Grand Canyon 8.
I want to buy a gravel bike from Propain, the Terrel CF and it seems that I fall in between sizes.
My measurements are: 169cm height and 80cm inseam.
From here it looks like I can choose either a size XS (160-170 cm) or S (168-178 cm). The only advice they have is if you are in between sizes choose small if you want it playful and choose larger if you want it smoothly, which honestly doesn't help much. I also tried to ask the question on their chat but I got no response.
In case it helps, the type of riding that I do: while I am not gonna go to races I sometimes treat my rides as sort of a workout (1 hour-ish sessions, trying to go as fast as I can), other times I do longer rides (2-3 hours) and occasionally 5hours rides, hoping that in the next warm season I'll increase the frequency of these longer rides. Terrain-wise, I ride mixed stuff: road, gravel, forest roads, flat and also hilly.
So I am looking for your advice and experience in this regard, what things I should consider while making this choice?

I’m in the longer is better camp. I don’t like toe overlap and I like stability at speed when the terrain gets rough and on single track. You can dial in the fit with a shorter stem and moving your saddle forward. All within reason. we’re talking 10-30mm. But you can also do the opposite with a shorter bike, so yes it does come down to whether you want a more stable bike or something that’s quicker to turn.
