Tried replacing this 122.5mm cartridge bottom bracket to Shimano hollowtech style cranks and BB but the cranks were hitting the chain stays.
Question is with 122.5mm bottom bracket what is my option if I want to upgrade to a non cartridge bottom bracket style crankset?

Well if you still have your hollowtech crankset, I’m sure you can remove the chain ring and fit a smaller chain ring so it doesn’t hit the chain stay of your bike and if possible put spacers on your bottom bracket to further the gap between the cranks and the bottom bracket shell.
What frame do you have and what # of teeth on that chain ring? Some frames only allow so big a chainring
The crankset you bought should have a recommended BB size.
You need to know the correct chainline for your bike, and even if you buy the recommended BB size, you still need to measure in order to make sure the chainline is correct. Sometimes the recommended BB size is not correct for a specific frame (although it’s usually pretty close.)
The size of the old one is irrelevant, once you change types.
What HT2 crankset did you try to use?
What was your chain line on old setup. If you don’t know, this would be worth reinstalling bb and drive side, so you could have a real target
Another way of putting the question to the community is that if I am using a standard Shimano H2 bottom bracket what should be the axel length of the crankset to match up with the 122.5mm bottom bracket width.
Yeah I didn’t know how to measure the chain line clearly so I was not able to measure it. I thought I can get a longer spindle to make up for the 122.5 crankset but lesson learnt.
