I was thinking of replacing the flat bars with drop down bars, replacing the seat, pedals and the wheels as sort of a fun project. Is it possible and could someone help me with the process/ what I would need? (Especially with the headset and new stem)

Wow. So late 80’s. Simple geometry is the basis for many a good gravel bikes. Gave up my 1989 Giant Brownstone during Covid shortages to lbs for a client going gravel racing. Wished I hadn’t. Loved how that geometry rides when not doing technical trails. Perfect for what you intend to do.
Anyhow, due to similarity to the Giant, a dropbar should go on this fine. May need to change stem to alter your reach.
