Just turn the lever anti clockwise, and pull the axle ..

Turn that L shaped thingy (without pulling) coming out of the middle of the wheel (thru-axle). If it’s your first time removing it, push hard. It really takes some effort.

There should be a YouTube video from canyon service hub that helps. However, you should be able to just turn the handle and remove the axle.

Do not pull the lever out. Just turn it counter clockwise to loosen it. It is just like a long bolt.
