The ONE is higher end drivetrain with integrated power meter, higher end (but still alloy and not carbon) wheels, but the FIVE has more conventional compact endurance road gearing so may be faster on descents. The 2021 ONE is more gravel-centric gearing and will be better for climbs.
The power meter on the ONE crankset is integrated and will need an expensive replacement when you wear out the cranks.
