So I changed the break hose on a shimano 105. I've managed to pushed the barb to there with a mallet, as I don't have the specific tool. Is it enought to connect or will it leak and force me to cut and insert again a barb ?
2. Not even close. The end is also poorly cut. Cut the hose with a brand new utility knife blade in one smooth motion and use a proper barb tool.

Nope, keep going until flush. Helps to have the tool that cuts/presses to get a cleaner cut for it to bottom out also.

for the next time get a piece of some wood and a fresh utility knife to cut the end flush…like this it might be a bit difficult to get a good seal.
Next, the insert-thingy has to be flush with the rest of the tube. I also have no proper tool, but I anyway always found ways to get it done.
Some ideas:
-magura brakes ship with these yellow brake caliper Spacer things, that second as a holder for brake hoses, but you’ll still need some clamps to squish them together.
-you can take a small bit of wood and a drill bit with the same diameter as the tube, drill a hole in the wood, saw the wood in half along the hole and boom you have a tube holder (slightly undersized recommended)
-alternatively, wrap the end of the tube in heeps of tape, grab it tightly with some pliers and beat in the insert pin. then remove the tape and done.

Needs to be flush. If you can see the gap, that’s a no.

please read & follow the manufacturers instructions, Shimano covers the proper way to cut your brake hose and tells you what to do step by step.
as other people said it’s not a clean cut nor is it the barb flush.
Amazon sells a fairly cheap tool that will help you cut clean and properly inset the barb for under $25. It’s well worth it vs the hassle of doing it wrong.

Been there, done that, bought the tool

No, you can do better. I believe in you.

No, & I’d have the olive on the hose first then put the barb in.

As someone who has never used hydraulics and is currently building up an old frame, this thread was really scary until I realized it wasn’t relevant to me

I just installed a set of Shimano and used this tool which is surprisingly decent. The line cutter isn’t great but what you can do is remove the large screw, feed the line backward through the hole, clamp it in the line clamp, then use a sharp knife against the end of the tool to trim the line. If that doesn’t make sense, I can post a pic or video of what I did.
Speaking from experience, you need the proper tool to insert these, at the very least the yellow clamps that come with a brake set. I asked my LBS for them and they gave them to me for free.

Nope.
1. It’s b-r-a-k-e, not b-r-e-a-k

Nope needs to be 100% flush to the hose.
