I'm looking at these three bikes – because my budget's capped at £600 – this is going to be my first bike and I'm going to mainly use it for commutes to and from work – all of which is road / asphalt. I want something that can do light trails as well, because I'm mostly going to stay on the road I guess, I still don't know what I want to do in that aspect unfortunately. I was also wondering if gravel bikes can hold up to the UK rain when winter comes around. I'm hoping to pick up one of these this weekend, so any and all advice is appreciated !

If you are riding mainly road then you want the gravel bike. I’m not sure why you think it would not cope with rain.
