I added 2 gears. Parts salvaged from a trash day curb score. New cable and chain and it is super fun to push this 50 pound monster. Next goal is to add a front brake is anyone has some ideas. I have a caliper brake set up from a 1960's schwinn typhoon but not sure if the arms are long enough. Drum perhaps?

This is easy, I just did exactly this last week for a client on a Trek Wasabi, with exactly the same thing, a coaster brake Nexus 3 speed hub.
TEKTRO makes super-long stiff front calipers. You already have the hole in the fork because of the fender.
Just measure with a caliper the distance from the bolt to the rim sidewall in millimeters and that’s the reach you need. The caliper is like $15 or so on eBay.
