I’m in between sizes L and M on Canyon. I’m 6’2 but have a short 34in inseam. I ordered a Large and I feel pretty stretched out but it is my first drop bar bike. Thoughts? Thanks!!
Set your saddle as forward you can. You might need a 0 offset seat tube. Post photos in other positions, like one with the pedal in forward position.

Are you sure about your inseam? I am barely 5’11 and the same inseam (86,5cm measured at Canyon in Koblenz last week btw lol).
At 5’11 I fit canyon’s S bikes so much better, I test drove Endurace and Grail. My height is also in between sizes (S and M). I think Canyon’s sizing is slightly unintuitive where I would always go to the smaller size when in between sizes.
That said, I once bought an expensive bike that was slightly too big for me and I carry that trauma to this day haha.

First impression: bike is too big. Your leg looks extended (however wear the shoes you will ride it with, they may have different heights). Also your arms are stretched, do you have much weight on your hands?
This things may be corrected (see other posts) with changing parts.

First of all: you bought a drop bar bike with aggressive geo. You will not sit upright, so get used to that thought. However: saddle is too high, try flipping the stem and rotating the bars up slightly
