Looking for some opinions from those more experienced than me… I am looking to get into biking and am considering rebuilding an older 90s(ish) mountain bike while doing so. I like the idea of putting some sweat equity into the bike and learning all the pieces and parts on it in the process. I am handy and would like to do as much of the work as possible but have a great local bike shop if I get stuck.
My goal for the bike would be to have just a good, solid, fun bike. I am not worried if it’s the newest, lightest, most advanced, etc., just looking for something that I can ride around with my young kids on local farm roads and maybe hit a dirt trail or two at the nearby parks.
The pictures below are a few options that are near me on Marketplace. What would be the best base to start with out of these? Looking to keep total costs below $500 for now. I am leaning toward the Trek Antelope 830 but would appreciate any thoughts you all may have. Thanks!

The trek is for a giant, someone around 6’3-6’5.
The univega is for someone 5’11-6’3
The Bridgestone would be my pick and is for someone 5’6 to about 5’11. The giant is about the same from how it looks.
Would say the trek is an XL frame, the univega is an L, the last two are Ms.
Univega is the only one with a threadless headset. That alone will save a lot of hassle as it is ‘modern era’
Oh man, cool seeing a Bridgestone. I have my dad’s ancient MB-Zip in storage… he bought it new and rode it for many, many years as his fitness bike (as it sits, it’s running slicks and older XTR kit). A small part of me wants to slightly modernize it and keep it going.
So, I say the Bridgestone from a novelty standpoint. If the geometry is similar to or the same as the Zip, I like it.
