On the way, I meet the very friendly Zambian people, I have lunch in a remote village full of drunk people, and I manage to hide behind a field of maze to camp before reaching Kasama on the next day.

To the guy on the first corner when he left who saw you and said "I don't want peace" wanted you to finish and say "I want problems" must have seeing you leave a 1st world country and cycle in the heat and poverty-stricken Africa

Wonderful. Its so sad that Africans let their nations down so badly. That drunk in the pub was doing his best to threaten or extort money from you. And the Police in that first stop were on the same mission. Its so obvious, they are simply not bright enough to do it well and hide it. The smiles from the locals make you forget these short-comings but they are always there lurking in the background.

Zambia turned out to be an interesting country. Native people seem to be comfortable in english.

The Bantu delicacy you found in Zambia called Nsima is generally known as Ugali in Kenya but Sima among the ethnically Swahili peoples.
Ugali in Tanzania I suppose also in Burundi and Rwanda while it is Kaunga or posho in Uganda.
Nsima in Malawi and Zambia
while in Zibambwe it is Sadza
South Africa alongside Botswana and Namibia suppose, its Pap.

At 31.00 the clouds form a temple like shape welcoming you to the town. I read about and experienced alcoholism in these sort of towns across different countries. Locally made concoctions are very strong. The people seem very friendly and the skies and clouds are palpable and seraphic
