I have a touring version of a Brompton which Kinetics in Glasgow converted for me from an old original model. 14 speed Rohloff hub and belt drive.
I use a 40litre Exos rucksack on back rack and a 20litre Brompton front mounted bag which gives me loads of carrying capacity for multi day camping tours. Larger 20inch Schwalbe marathon tyres allow me to ride rough tracks too. Just done the Hebridean Way on it with a lot of off roading.

We actually have driver-less autonomous Uber cars driving around San Francisco here in Northern California and you Brits wii get a kick out of this, they are Jaguars.
Paul I thought 16 miles per hour was the law on these bikes, if so they must be made road legal registered with DVL.
Keep smiling adventures just released a bike packing video where he traveled from Bournemouth to the highest pub in the UK then Bike packed it to the Lowest Pub In the UK covering over 600 miles in around 7 days, he Shows what bike and kit he uses too, well worth a watch if you thinking of using a normal bike for bike packing.
Hate to be that guy but… bikes like that are not made for people who know bikes. It would destroy itself doing anything remotely off-road, and is horrifically compromised for on-road/gravel use.

Dude you can take any bike on trains just make sure you click on bike storage while booking and the new 12 speed bikes are just stupid you can get up bigger hills than you'd ever dream of still sitting down. But 100% look into what you can actually get online from the big bike brands as there's a bike-pocalypse happening and brands are dying so there's so much stuff on sale (at least there has been for most of the year)

I've done the bike packing thing here in Australia….across the continent. 5000km from Perth, Western Australia to Sydney, New South Wales in 45 days…. a logistics challenge and a lot of fun.
Me n dad did the great glen way in May to inverness carrying full camping gear so we could then get the train from Inverness to avimore and do the east highland way back to fort william was a proper adventure for sure
Wow. For a chap of a certain age, unused to cucling, you were really whacking it. Did we see you cycling in a pavement?
I am sure there were some missed signals.
One handed cycling is required, but not for rearranging cameras.
Bike packing is excellent, as is cycle touring. I have a Genesis Tour de Feu that may be what you need.
Paul you need a bit more safety gear …. gloves to protect them donny’s … a light colored shirt that doesn’t blend into the background …. a day running headlight …. i rode real motor bikes for years and my ‘near miss’ rate dropped dramatically with just day running lights and a light / white colored helmet. The ‘sorry mate i didn’t see you!’ excuse don’t help you when you’re the one lying at the side of the road all banged up… fun video take care out there mate 👍👍

Most people dont realise that you 15 mph is not a lot of speed on a push bike. The same people moaning will probably be the same people that overtake cyclists with about 15cm between the car and the bike.

Been bikepacking for 2 or 3 years now love it to bits, usual wild camped spots are in Notts, Leics, Lincs and the Peak District. More recently finished the Rebellion Way in Norfolk; I think that would be right up your alley. Nothing technical, mostly road, some forests, bit of a sand and certainly very little in the way of up. Have a look on the Cycling UK if your interested.
