Ok, I gotta ask, with saddlebags that long and sticking up that high, don’t they make for a really tippy center of gravity? And won’t they wag the dog a bit? Or is the trick to put all the heavy stuff on the fork bags and only carry clothes/dry food in the saddlebag?

Oof at the stem shifter, if you don’t mind friction shifting, you could probably find a relatively affordable shifter & either bar end mount or “thumby” mount. I only used those stem mounts as a mechanic testing customer bikes, you should see usability improvement from a change out, it will let you mount your phone on the stem which should keep it out of the way of your knees as well
