    It is a popular restaurant that is crowded daily with both local regulars and customers from overseas. This time we are filming closely at night for two days. It’s amazing today, again.

    This is the master of the restaurant. He trained at Hakkou for 10 years and opened Hassei for about 20 years. He has 30 years of griddle life. A regular helps an overseas customer change his reservation in English.

    He became a regular customer of Hassei when he was working in Hiroshima, and although he is now in Kanagawa, he always comes to Hassei when he comes to Hiroshima. In the past few years, the restaurant has become very popular among foreign tourists.

    Where I learned to cook, they didn’t use any of those things. When I tried it, I found that Japan has umami ingredients and sweetness. When I added these, it was delicious, so I started adding them. Hakkou only uses bonito powder and pepper. It was cabbage, bean sprouts, tenkasu, bonito powder, and pepper.

    Just adding salt changes the taste completely. When making this flour, Hakkou used to put in very expensive salt. We use water, flour, and eggs. Hakkou put salt in it. The taste is totally different.

    Since Hassei’s customers include many families and businessmen, they have reduced the salt content and increased the volume of the okonomiyaki. I was very impressed that the master is always evolving the taste and menu with his customers in mind. He is taking a video enthusiastically.

      こう言う所日本人は商売下手だし儲けようと言う考えが無い。
      その点一蘭や一風堂などのとんこつラーメン店は外国人に人気が出るとすぐに海外進出したり東京に沢山出店している。
      今東京の一蘭や一風堂はほとんど客は外国人観光客。
      日本人はもっと商売に貪欲になって儲けたり日本の誇るお好み焼きをどんどん世界にアピールすべきだ。

    15. カウンターばかりじゃない所がいいね!従業員の金髪やめて。失礼かもしれないけど肉づきの人が調理してくれると食欲わくね。気からずに日本人まるだしして。私の結論は外食でいい気分になれば良い!母親の弟が広島にいるけど、広島でお好み焼き食べたことない。しょうもない中華料理だけ!あと喫茶店。原爆記念館は3回行った。お好み焼きはお好みだから美味しい焼き物だったらいいんだよ。たこ焼きとは違う!
