27″ are still made, so you should be able to find one. But if you want to swap 700c wheel is a bit smaller in diameter so your rear brake caliper most probably won’t work. But you don’t have one. It’s a good idea to have one and you will need long reach brakes, something like Tektro R559.
If you are worried that hub with won’t fit your frame, then any single speed/fixie wheel will be fine, they are 120mm spacing and your frame probably is 120 or 125.

Why not change the rim to 700c? Also, you could just replace the tire. Bike tires direct sells 27” tires.
